1lb dry pinquito beans
2 quarts water
3/4 cup Susie Q's Pinquito Bean Seasoning
This vegetarian pinquito beans recipe is a simple way to prepare traditional pinquito beans using only a few ingredients. Use as a savory, protein-rich side dish or even as an addition to a green salad.


1.Inspect the beans, removing any rocks or harvest fragments
2.In a colander, rinse beans thoroughly
3.Add water, beans and pinquito bean seasoning to tall pot
4.Stir to mix
5.Bring to a boil on medium-high heat
6.Reduce heat to simmer and cover
7.Stir every 15 minutes
8.Cook at least 2 hours; more is ok - the firm beans can not be overcooked
